We select kumquats from small-scale farmers in southern Taiwan. These kumquats grow on hillside areas that are below 500 meters above sea level. They are round, plump, and young, with green skin, and have a balanced acidity and sweetness.

Taiwan provides an ideal environment for growing a variety of tropical fruits all year round. With their moderate sweetness and sourness, kumquats are perfect for making fruit wines. This has led to them becoming one of Taiwan's unique specialty wines.
